Pan grilled chicken with wilted lettuce

That’s what we had for dinner tonight and boy was it good (if I do say so myself) Our neighbors gave us some home grown leaf lettuce and the first thing I thought of was wilted lettuce. I love wilted lettuce, it reminds me of my Grandma Marie who taught me a lot about cooking.
Ingredients for 2 servings:
  • 2 boneless skinless chicken breast
  • 2 heads leaf lettuce (about 8 cups torn lettuce)
  • 1 medium onion, cut in half and sliced
  • your favorite grill seasoning
  • 1/4 cup vinegar
  • 1/4 cup sugar
  • 1/2 cup water
  • 1 tablespoon olive oil
  • 1 Tablespoon bacon grease – you may use oil if you don’t have or like bacon grease
  • salt and pepper to taste
First, thaw 2 chicken breast. Sprinkle breast with grill seasoning. Place 1 TBS olive oil in skillet, heat and add chicken, add sliced onion. Cook over medium/low heat until done. Remove chicken. Place torn lettuce in large bowl. Mix sugar, vinegar, water together stir to melt sugar. Add bacon grease to pan with onions. Add sugar, vinegar mixture to pan. Stir to loosen any bits at the bottom of the pan and let cook for 3-4 minutes. Pour hot sugar vinegar mixture over lettuce, stir with tongs to coat. Lettuce will wilt a little. Slice chicken breast. Place lettuce on plate, top with chicken. Add some juice to each plate. Enjoy!
