I was trimming our bougainvillea out front and guess what I found tucked deep inside? Baby birds…. three little babies, they are tiny and must have hatched recently.

We’re hungry.

Last week was filled with sunshine and laughter! I spent the week with my BFF’s - 6 of us from high school spent a wonderful week together at the beach! I am so blessed to have such great friends!

Baked Ziti with Sausage

Here’s a new recipe I’m adding to my recipe stash.

Preparing the sausage mixture

Before going in the oven

After – as you can see, it was yummy!

Ingredients

3/4* of a 16 ounce package ziti pasta (* my hubby likes a lot of sauce so I
usually cook the whole box and use the leftover pasta for pasta salad later)
4 Italian sausage – casing removed and broken into bite size pieces.
1/2 onion-chopped
1/2 sweet red pepper- chopped
15 ounces ricotta cheese
1 cup shredded mozzarella cheese
1 TBS Italian Seasoning
1 egg, beaten
1 (32 ounce) jar of your favorite spaghetti sauce or make your own sauce.
1/4 cup grated Parmesan cheese

Directions

Bring a large pot of lightly salted water to a boil. Add ziti and cook for 8 to 10 minutes or until al dente; drain and rinse.
Sauté the sausage, onion & peppers and add spaghetti sauce.
In a medium bowl, mix the ricotta cheese, mozzarella cheese, seasoning and egg
Preheat oven to 375 degrees F (190 degrees C).
Lightly grease a casserole baking dish and lightly cover the bottom with spaghetti sauce. Layer with 1/2 of pasta then with 1/2 of cheese mixture, then some sauce. Repeat layers, top with remaining spaghetti sauce, followed by Parmesan cheese.
Bake in preheated oven for 30 minutes; let stand for 15 minutes before serving.

You may use other elements on your LO but it must stay Monotone Chromatic.
You may use any of your kits for this challenge.

Only 2 weeks until my girls trip! Woo Hoo!! I can’t wait! This is the BIG trip we take every couple years. We are going to the beach for a WEEK! We usually take several weekend trips throughout the year too. We all grew up together and have been friends FOREVER! We have such fun on these trips, laughing, eating, laughing, swimming, laughing, playing cards, laughing…. you get the idea, my sides hurt from laughing so much! I am so blessed to have such good friends! They are really part of MY FAMILY!

Banana Tree and a Freebie

We planted a Banana tree back in May and look at it now, it has really shot up! It’s a Cavendish banana tree, maybe in a year or 2 we will have some bananas.

M’mmm…… good

Today I cleaned and cooked a pound of fresh gulf shrimp and made some tangy cocktail sauce! The secret to good shrimp is DO NOT over cook it, 3 minutes and it’s done! It was absolutely wonderful. There is nothing better than fresh shrimp. It is one of my favorite foods.

I sure hope the cap on the oil leak really does work. I feel so sorry for everyone and everything in the areas affected by the oil spill. I thank God that it has not affected our beaches or our seafood!

Blog Face Lift

No Power

I am so sick of our power going out for no reason, no storms, no nothing! Just no power. It has gone off twice in 5 days, about 3 hours each time. I guess I should be thankful that at least now it’s coming back on in a few hours and not out for 5 days like it was last year.

I hope to finish up a new kit this week if the power cooperates!

Ahhhh

I had a great birthday! My two sister-in-laws made a great dinner that included my favorite chocolate cake with chocolate icing! Sorry I forgot to take a pic to share. I only wish I could have been with more of my family and friends. I miss them so much! Thank you all for the birthday wishes!

The other day I made my Easy Bean Soup and these yummy corn muffins.

They were delicious! I used Jiffy Corn Bread mixed according to directions. Then take 1/2 cup frozen corn, warmed in microwave, add 1 tablespoon butter to warm corn (to melt the butter) add to batter, then add 1/4 cup diced sweet red peppers. Do not over mix your batter. Bake according to directions.

I just finished up a new kit that should be in the store in a few days.

Cookies and a little story

Yesterday I made some yummy peanut butter cookies, they were good, but I’m still looking for that perfect recipe. I’m looking for a cookie that’s a little crunchy on the outside and chewy on the inside. If you have a favorite recipe you would like to share, I’d love to try it!

Next week I’m going to try a recipe Bunny gave me last night. I’ll let you know how they turn out.

Story for Today – My good friend Diane emailed this little story to me today and I thought I’d share it with you.

When I was a kid, my mom liked to make breakfast food for dinner every now

and then. And I remember one night in particular when she had made

breakfast after a long, hard day at work.

On that evening so long ago, my mom placed a plate of eggs, sausage and

extremely burned biscuits in front of my dad. I remember waiting to see if

anyone noticed! Yet all my dad did was reach for his biscuit, smile at my mom

and ask me how my day was at school. I don't remember what I told him that

night, but I do remember watching him smear butter and jelly on that

biscuit and eat every bite!

When I got up from the table that evening, I remember hearing my mom

apologize to my dad for burning the biscuits. And I'll never forget what he

said: "Honey, I love burned biscuits."

Later that night, I went to kiss Daddy good night and I asked him if he

really liked his biscuits burned. He wrapped me in his arms and said, "Your

Momma put in a hard day at work today and she's real tired. And besides - a

little burnt biscuit never hurt anyone!"

Life is full of imperfect things.....and imperfect people. I'm not the

best at hardly anything, and I forget birthdays and anniversaries just like

everyone else. But what I've learned over the years is that learning to

accept each others faults - and choosing to celebrate each others differences -

is one of the most important keys to creating a healthy, growing, and

lasting relationship.

We could extend this to any relationship. In fact, understanding is the

base of any relationship, be it a husband-wife or parent-child or friendship!

"Don't put the key to your happiness in someone else's pocket - keep it in

your own."

God Bless You...... Now, and Always....

So Please pass me a biscuit, and yes, the burnt one will do just

fine.!.!.!.!

My new kit and Pick Ur Bits

We went out to lunch today , it was yummy! We went to this little place we like, they have specials everyday, kind of like the blue plate special, but they have about 5 different specials everyday. Plus they have a full menu if you don’t like any of the specials. I had the express lunch, today it was country fried chicken breast with mashed taters, gravy, 2 veggies and garlic bread all this for only $4.50. See why we like it, it’s yummy and the price is right. And they don’t skimp on the portions either. I’m stuffed! I think it will be my lunch and dinner! I might have a snack later but doubt if I’ll feel like a whole meal. So what did you do today?

Who ran over the mailbox?

Did I tell you about our mailbox? We just got a check in the mail to replace our mailbox. If you are in the market for some new mailboxes, you should check out this site: http://www.moremailboxes.com/

Well a few months ago, someone just plowed into it. Knocked the whole thing over. It was the metal post kind and it was chopped off at the ground. Poor thing, even the little flag was broken. We had no idea who who ran over our poor mailbox, but as luck would have it, our neighbor saw who did it…. are you ready…….

it was the mailman! Not our regular mailman, he’s a really nice guy and would have told us or left a note. There was a substitute mailman working that day and our neighbor saw him back up over our mailbox. Well, we filed a complaint with the post office, it took a couple of months but we finally got a check to replace the mailbox.

Only a few days left to do the Recipe Challenge, you must post your layout by January 31st.

Happy Sunday!

After church we went out for a buffet brunch at one of our favorite little restaurants. Yummy biscuit and gravy, plain grits & cheese grits, eggs, bacon, 2 kinds of sausage, ham, hash browns, pancakes, French toast, fruit, pastries and more. I know I’m missing some of the goodies. It was delish!!

It’s warming up down here, it’s sunny and going to be about 75 degrees. The pool looks inviting………….

but……………. it’s only about 60 degrees!! Brrrrrrrrrrr!!!

We don’t have the heater on because it’s been so stinking cold and our electric bill would be outrageous! We will probably turn the heater on in about a month. Last year in late February we were swimming with the help of the heater.

Getting settled back in

We are back in Florida and getting settled. Still a few things to unpack but I’m getting there. It was 10 degrees when we left Ohio, brrrrrr, baby was it cold and snowy. When we arrived back in Florida the sun was shining and it was much warmer, it was about 50 degrees. But at night it got cold, freezing as a matter of fact! There were several nights before we got back and a few after that got below freezing and our plants have suffered some damage. The pony tail palms are all ok, but the pigmy palm, the foxtail palm and bougainvillea have some damage. Last year the pigmy palm had some frost damage and it came back just fine. I’m hoping the foxtail palm that we just put in last summer comes back this year. Only time will tell! Everyday we are here it gets warmer and warmer. It was about 70 here today!

Here’s a few pics to show you the damage. All the leaves were bright green when we left in mid December, not brown!

Pigmy palm all brown.

Notice the green in the middle, that’s some type of evergreen so it’s used to the freezing temperatures, but the Trinette (Umbrella plant) did not like the cold. I think these plants will all come back good as new in the spring. I sure hope so anyway!

I’m going to try my best to be a better blogger. I’m going to try to blog almost everyday! But sometimes my life is just so boring, I don’t know what to write, so forgive me it it gets a little boring!

This little guy has been hanging out at our house the past few days. By day he sleeps in our pony tail palm, then at night he stays by the front door to eat the bugs attracted to our porch light. Isn’t he cute!

I’m making green bean casserole today and yesterday I made some LEMON LIME BARS (be sure to read the complete recipe before starting as this person did make some changes to the original recipe) to take for Thanksgiving dinner with family and friends. This was my first time making lemon bars; the only thing I did different from the original recipe is that I didn’t make the candied lemon or limes for the top, I don’t think they need it. Lining your pan with aluminum foil is a great tip, you can lift the whole thing out to cool and clean-up is a breeze. I used cupcake holders to make them easy to serve and eat! We HAD to sample them last night and they are yummy!

I love the wildlife in Florida

Yep that’s a bobcat! This guy was in our neighbors front yard today. About two weeks ago, Phil saw a cougar in our yard but he got away before he could grab the camera.

The other day when I was swimming in the pool, I had a swim buddy. This little guy was enjoying a dip with me. I scooped him out because I didn’t the the chlorine water was good for him. He’s the smallest frog I have ever seen.

I’m getting ready for girls night, we are going out to dinner and then we will play cards! Probably euchre, pitch or 500 tonight. It’s one of my favorite things to do, we have such fun! Last week we also played train dominoes, that was fun too for something different!

Easy Bean Soup

Tonight for dinner, I made some yummy and easy bean soup.

I have always made my bean soup with dry beans and they would have to soak overnight. I bought some canned beans and thought I’d experiment.

Here’s the final product, everyone loved it!

Here’s the recipe.

Easy Bean Soup from Lynn

1 onion - chopped

1 cup chopped celery with some of the leaves

1/2 tsp chopped garlic

1/2 tsp dry basil

Saute the all of the above ingredients in 2 TBS oil ( or bacon grease if you are from the south) until onions are translucent

Add 1 1/2 teaspoons of Emeril's Original Essence seasoning** ( I love this stuff )

**here’s a recipe from Emeril to make your own Emeril’s seasoning

Add 1 can - 15 oz diced tomatoes (if you want it spicier you could use salsa instead)

Let cook down for about 3 minutes

Add 1/2 cup petite diced cooked ham
Add 1 TBS bacon pieces (I used Oscar Mayer Bacon bits)

Add 40 oz can Great Northern Bean - including liquid

Add 15 oz can Pinto Beans - including liquid

Mix 2 beef bouillon cubes or granuals with 2 cups hot water and add to soup.

Simmer for 1-2 hours

Enjoy!

My friend Gayle gave me some salmon that her friend caught in Alaska so we are having that for dinner tonight, it should be yummy! There is a concert at the local park tonight so we may go to that later.
